Café Ouro da Serra emerged on the Special Coffee market in 2017, operating in the production of seedlings and coffee production in a sustainable way since 1979. Established in the city of Conceição das Pedras in the Mantiqueira mountain range at an average altitude of 1300 meters and in partnership with large producers and trained technicians, Café Ouro da Serra has been specializing in the art of growing grains seeking the excellence in special coffee production to provide surprising and unique flavors and aromas.
Due to the fact that coffee plantations are at altitudes of approximately 1300 meters above sea level, the climate causes slower maturation of the fruits, resulting in an improvement in the quality of the drink. To complete a cycle of excellence with all control and quality, our grains are harvested manually, carrying out a process of separating the grains, extracting only ripe grains in their cherry stage, where the grains has already reached the maximum development, presenting sugar content and other elements, capable of providing the best standards of flavor and aroma.
The Coffee roasting process is a fundamental step to obtain a final product with the highest quality. In this process the main physical and chemical changes occur and produce the compounds responsible for the color, flavor and aroma of the drink. We work with a line of roasters with advanced technology, which provide precise adjustments for roasting specialty coffees as they are able to extract the maximum of the positive qualities of the coffee. They have digital controls and air flow, providing countless adjustment possibilities, greater control of the entire process, providing our customers with the best fragrances, aroma, greater control of acidity, body, sweetness and aftertaste.
